Nitrates and nitrites

  • the highest content can be found in vegetables and root crops
  • trace amounts in fruit (melons, bananas)
  • lethal dose 32 mg/kg
  • formation of methemoglobinemia: Hg (Fe 2+ ) + NO 2 - → MHg (Fe 3+ ) + NO
  • first symptoms at a MHb concentration of 6–8% of the total Hg content
  • formation of carcinogenic nitrosamines

Classification of nitrate values

  • with a high content (over 1000 mg·kg -1 )
    • lettuce, endive, spinach, chard, Beijing and Chinese cabbage, radish, radish, celery, rhubarb, sweet corn
  • with medium content (250–1000 mg·kg -1 )
    • Cabbage, cabbage, cauliflower, eggplant, parsley, carrots, broccoli, garlic, potatoes
  • low content (below 250 mg·kg -1 )
    • Brussels sprouts, onions, tomatoes, peas, cucumbers, artichokes, asparagus
