Protease

Proteases are enzymes that break down proteins by hydrolyzing the peptide bonds between amino acids. According to the place of action in the peptide chain, proteases are divided into:

  • endoproteases – cleaves a protein molecule inside its chain (e.g. trypsin, chymotrypsin, pepsin),
  • exoproteases – cleaves amino acids from the end of the peptide chain (e.g. carboxypeptidase).
